
<----Questo e' Oiji !!! This is Oiji which is korean cucumbers pickled in salt. It's kind of Kimchi. Most koreans can buy salted cucumbers in the market, or can make by themselves at home. I've never make the Oiji at home, I used to use traditional Market, cause I could find it taste better. So when u get the Oiji, you must soak in cold water for several hours(you should control for ur taste about 10 hours) until the Oiji is not salty a lot. ( I don't like too much salty Oiji!)


After you slice into 0.2cm, put on the strainer and press out(squeeze) the water from the Oiji by hands.
Put in to the bowl, Chilli pepper powder, sesami seed, suger, minced garlic, chopped green onion, sesami oil with the Oiji. Mix well.

Here is finally finished the Oiji Muchim!!!
You can also try with rice or salad.
It goes well for you.
I've heard most foreigners r don't like cucumber kimchi, but I hope you enjoy this korean side dish!(like kimchi)
